Hrmm.

how do vanishing points , horizon lines, and perspective work?

How many vanishing points can there be in a drawin'?

I know the single, and double vanishing point drawin's.....

There is also a way of creating the perspective using even 3 control points

There can be as many as you want. They are just guidelines to keep vanishing points and constant perspective among parralel objects and planes. For a grid pattern, you'd only need 2 vanishing points... for some Parisian type non parralel street buildings, you might have a lot more...
