I like Chris Van Allsburg's Pencil illustrations - http://www.eduplace.com/rdg/author/cva/

I also Really like David Shannon's illustrations, really cool books too. He actually came to the bookstore I work at not too long ago. Nice guy He graduated from Art Center and I don't know if he actually has a site but his books are everywhere -
