Certainly have something interesting going here. I actually like the first posting alot more as it has a greater feel of 'mystique' and wonder to it. The 2nd one looks like a bit of an exaggerated Hulk Hogan (the wrestler guy). Don't know exactly what effect you are going for but a few things to consider:
1) the size of the moustach. At the moment it seems a little bit and out of proportion.
2) The colar. It seems to cut right under the jaw. If this is the case, and it is an old man, you might get subtle 'rolls' over the top of the collar.

hmm.. don't know of any tutorial sites, but i do like the pic very much!
reminds me of albert einstien for some reason, even though your old guy is bald. i really like how you did it with a black background instead of white, i inverted it, and i dont like it as much that way.. i suppose that was a complement..
would be cool to see the rest of his body, maybe in a suit or something, or in a wheel chair, depends on what kind of feeling you decide to give.
let me know if you do update it, i'd really like to see it.. keep up the work!
