Main question...what is the primary difference between the airbrush and the paintbrush in photoshop? How are each best used?
Secondary question...how do various people use their tabs? Pressure fade? Size fade? both? what opacity is good to stay at?

Hi. If you're using the airbrush at, say, 20% opacity, each time you go over a pixel it'll get 20% closer to completely opaque. If you're using the paintbrush, then 20% is all it's going to get to, no matter how many times you go over it. That is unless, of course, you pick up off the mouse button, then the stroke is finished and you can go over it again.
As far as pressure/size/etc, I use what's appropriate for what I'm working on. I use pressure fade a lot more than size. And, once again, the opacity varies depending on what I'm drawing. I'll usually keep it at 100% with the paintbrush, but when I'm texturing, I'll do a soft airbrush at like 6% since I get a lot more control.
