Whenever I try to put text on my images in PS i can only get 30 pixels high, and as soon as i go any higher it like resorts to 0.3 pixels or lower, i cant even see them. WHATS WRONG?!?! Brain hurting Someone please help

Change the print resolution of the image. It's probably at something like 5 dpi, which will make a size 200 font only 6 pixels high. No good. Set it to something like 72 dpi or higher.
To change the dpi, goto Image/image size and set the heighth/width settings to pixel counts, then change the resolution (which is the setting for the image's printed dots per inch... dpi).
