Stephen: look at the reference more often than you do your painting. Notice every blotch of different value or hue or saturation. That's how I think when I pick a color. Use many colors, to get the life like ness of the picture. And squint your eye at the picture and your painting often, see what's wrong (like your whole painting is too yellow or blue or wtf) and change as you see fit. Rinse, and repeat, ad nauseum.
