I think the composition would benefit from the castle being in one of the upper left/right corner, or least somewhat off from center. That way the trail could lead the eye diagonally across the image ...

Without seeing specific examples, I would guess that the style you are referring to is done in Illustrator, or some other vector based illustration program. This *usually* means you put away the Wacom ...
